Fresh Cheese
4–6°C (39–43°F)
Serve cold. Mozzarella, ricotta, feta.
Soft-Ripened
16–20°C (61–68°F)
Remove from fridge 1 hour before. Brie, Camembert.
Semi-Hard
16–20°C (61–68°F)
Room temp brings out flavor. Gouda, Gruyère.
Hard / Aged
18–22°C (64–72°F)
Slightly warmer brings out nuttiness. Parmesan, cheddar.
Blue Cheese
16–18°C (61–64°F)
Room temp intensifies flavor. Stilton, Roquefort.
Goat Cheese
14–18°C (57–64°F)
Slightly cool. Chèvre, Bucheron.

Cheese Board Building Tips

Rule of 3: Choose one fresh/soft, one semi-hard, and one bold (blue or aged hard) for contrast. Aim for different milk types — cow, sheep, goat.

Arrangement: Place cheeses 2–3 inches apart. Put accompaniments in small bowls between cheeses. Allow 1–2oz per person per cheese for cocktail parties; 3–4oz for a main cheese course.

Labels: Always label each cheese — name, milk type, and origin. Guests appreciate knowing what they're eating and it starts conversations.
