Food Safety Basics
❄ Fridge Temp
Keep your refrigerator at 40°F (4°C) or below. At higher temps, bacteria multiply rapidly.
❄ Freezer Temp
Freezer should be 0°F (-18°C) or below. Properly frozen food stays safe indefinitely, but quality degrades over time.
🔄 The 2-Hour Rule
Cooked food left at room temperature for more than 2 hours (1 hour above 90°F/32°C) should be discarded.
❌ When in Doubt
If food smells off, looks unusual, or has an unexpected texture — throw it out. "When in doubt, throw it out."
How to Maximize Freshness
Store raw meat on the lowest shelf to prevent cross-contamination drips. Use airtight containers for leftovers. Label and date everything in the freezer. Store produce correctly — many fruits release ethylene gas that speeds ripening of nearby vegetables.
These times are guidelines for peak quality, not necessarily safety. Many foods remain safe past these dates if stored properly and show no signs of spoilage.
