🍳 Foil Tent
Tent the breast loosely with foil if it browns too quickly. Remove foil for the last 30–45 min to crisp the skin.
🌡 Oven Temp
Roast at 325°F (163°C). For crispier skin, start at 450°F for 30 min then reduce to 325°F for the remainder.
🥤 Basting
Baste every 30–45 min with pan juices for moisture and color. Each baste extends cook time slightly as you open the oven.
❤ Resting
Rest for 30–45 min under loose foil. This is mandatory — juices redistribute and the bird will be much juicier.
❄ Thawing
Thaw in the refrigerator: allow 24 hours per 5 lbs. Never thaw at room temperature. Cold water thaw: 30 min per lb, changing water every 30 min.
